Keto Fried Donuts
Ingredients:
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup powdered erythritol (or preferred keto-friendly sweetener)
- 1 tsp baking powder
- 1/2 tsp xanthan gum (for elasticity)
- 1/4 tsp salt
- 2 large eggs
- 2 tbsp melted butter
- 1/2 tsp vanilla extract
- 1/4 cup unsweetened almond milk (more if needed)
For Frying:
- Coconut oil or avocado oil (for frying)
Optional Glaze:
- 1/4 cup powdered erythritol
- 1–2 tbsp unsweetened almond milk
- 1/4 tsp vanilla extract
Instructions:
Step 1: Prepare the Dough
- In a mixing bowl, combine the almond flour, coconut flour, powdered erythritol, baking powder, xanthan gum, and salt. Mix until well combined.
- In a separate bowl, whisk together the eggs, melted butter, vanilla extract, and almond milk.
- Add the wet ingredients to the dry ingredients, and mix until a thick dough forms. If the dough is too dry, add a little more almond milk, 1 tbsp at a time, until it’s workable.
Step 2: Shape the Donuts
- Divide the dough into 6–8 portions and roll each portion into a ball.
- Gently press each ball down to flatten slightly, then use your fingers or a small cookie cutter to make a hole in the center, forming a donut shape.
Step 3: Heat the Oil
- In a deep skillet or frying pan, heat about 1–2 inches of coconut oil or avocado oil over medium heat until it reaches 350°F (175°C).
Step 4: Fry the Donuts
- Carefully add the donuts to the hot oil, a few at a time to avoid overcrowding.
- Fry for 2–3 minutes per side, or until golden brown. Use a slotted spoon to flip and remove the donuts from the oil.
- Place the fried donuts on a paper towel-lined plate to drain excess oil.
Step 5: Glaze the Donuts (Optional)
- In a small bowl, whisk together the powdered erythritol, almond milk, and vanilla extract to create a glaze.
- Dip each donut into the glaze and place on a wire rack to let the glaze set.
