Keto Biscuits
Ingredients:
- 1 1/2 cups almond flour
- 1 tbsp baking powder
- 1/4 tsp salt
- 1/2 cup shredded mozzarella cheese
- 2 tbsp sour cream
- 1 large egg
Instructions:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, baking powder, and salt.
- Add the mozzarella cheese, sour cream, and egg. Mix until a dough forms.
- Divide the dough into 6 portions and roll each portion into a ball. Place them on the baking sheet and gently flatten the tops.
- Bake for 10-12 minutes, or until the biscuits are golden and firm to the touch.
- Set the biscuits aside while you prepare the gravy.
Keto Sausage Gravy
Ingredients:
- 1 lb breakfast sausage (ground pork or turkey sausage, without added sugar)
- 1 cup heavy cream
- 1/2 cup chicken broth (or water, if preferred)
- 1/4 tsp xanthan gum (for thickening)
- Salt and pepper, to taste
- 1/4 tsp garlic powder (optional)
- 1/4 tsp onion powder (optional)
Instructions:
- In a large skillet, cook the sausage over medium heat until browned and fully cooked, breaking it up into small pieces as it cooks.
- Reduce the heat to low. Stir in the heavy cream and chicken broth, allowing it to simmer.
- Sprinkle the xanthan gum over the gravy and stir continuously until it thickens, about 3–5 minutes.
- Season with salt, pepper, garlic powder, and onion powder, adjusting to taste.
Assemble and Serve
- Slice a keto biscuit in half and spoon the sausage gravy over it.
- Serve warm and enjoy!
