- 1 tablespoon granulated erythritol or another keto-friendly sweetener
Instructions:
For the Cookies:
- Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the softened cream cheese, softened butter, and granulated erythritol. Mix until smooth and well combined.
- Add the egg and vanilla extract to the cream cheese mixture and mix until fully incorporated.
- In a separate bowl, whisk together the almond flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a cookie dough forms.
- Gently fold the blueberries into the dough.
- Use a spoon or cookie scoop to drop portions of cookie dough onto the prepared baking sheet, leaving some space between each cookie.
- Flatten each cookie slightly with the back of a spoon.
- Bake in the preheated oven for about 12-15 minutes or until the cookies are golden and set.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
For the Blueberry Sauce:
- In a small saucepan, combine the blueberries and granulated erythritol.
- Cook over low heat, stirring and mashing the blueberries until the sauce thickens and the blueberries have broken down. This will take about 5-7 minutes.
- Let the sauce cool.
To Assemble:
- Once the cookies and blueberry sauce have cooled, spoon a small amount of blueberry sauce onto each cookie.
- Allow the blueberry sauce to set before serving.
