KETO BLUEBERRY CHEESECAKE COOKIES

Ingredients:

For the Cookies:

  • 4 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1/3 cup granulated erythritol or another keto-friendly sweetener
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup fresh blueberries (or frozen, thawed, and well-drained)

For the Blueberry Sauce:

  • 1/2 cup fresh blueberries (or frozen, thawed)
  • 1 tablespoon granulated erythritol or another keto-friendly sweetener

Instructions:

For the Cookies:

  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the softened cream cheese, softened butter, and granulated erythritol. Mix until smooth and well combined.
  3. Add the egg and vanilla extract to the cream cheese mixture and mix until fully incorporated.
  4. In a separate bowl, whisk together the almond flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a cookie dough forms.
  6. Gently fold the blueberries into the dough.
  7. Use a spoon or cookie scoop to drop portions of cookie dough onto the prepared baking sheet, leaving some space between each cookie.
  8. Flatten each cookie slightly with the back of a spoon.
  9. Bake in the preheated oven for about 12-15 minutes or until the cookies are golden and set.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

For the Blueberry Sauce:

  1. In a small saucepan, combine the blueberries and granulated erythritol.
  2. Cook over low heat, stirring and mashing the blueberries until the sauce thickens and the blueberries have broken down. This will take about 5-7 minutes.
  3. Let the sauce cool.

To Assemble:

  1. Once the cookies and blueberry sauce have cooled, spoon a small amount of blueberry sauce onto each cookie.
  2. Allow the blueberry sauce to set before serving.
