Ingredients:

For the filling:

  • 3 cups fresh or frozen blueberries

For the topping:

  • 1 cup almond flour
  • 1/4 cup unsweetened coconut flour
  • 1/4 cup erythritol or preferred keto sweetener
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon (optional)
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream (or almond milk)

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Grease a 9-inch baking dish or a similar-sized casserole dish.
  2. Prepare the blueberry filling:
    • In a medium bowl, combine the blueberries, sweetener, lemon juice, vanilla extract, and cinnamon (if using).
    • If you prefer a thicker filling, you can mix the cornstarch or xanthan gum with a little water to create a slurry and stir it into the blueberry mixture.
    • Pour the blueberry mixture into the prepared baking dish and spread it out evenly.
  3. Prepare the topping:

    • Drop spoonfuls of the topping over the blueberry filling. It doesn’t need to cover the entire surface, as it will spread out as it bakes.
  5. Bake the cobbler:
