Keto Broccoli & Cheese Soup

Ingredients:

    • 4 cups fresh broccoli florets
    • 1/2 cup unsalted butter

 

  • 1/2 cup diced onion
  • 2 cloves garlic,  minced
  • 4 cups chicken or vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions:

  1. In a large pot, melt the butter over medium heat. Add diced onion and minced garlic, sautéing until softened.
  2. Add fresh broccoli florets to the pot and cook for a few minutes.
  3. Pour in the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer until the broccoli is tender.
  4. Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth. Be cautious with hot liquids in a blender.
  5. Return the blended soup to the pot over low heat. Stir in shredded cheddar cheese until melted.
  6. Pour in the heavy cream, stirring continuously.
  7. Season the soup with salt and pepper to taste.
  8. Simmer the soup for an additional 5-10 minutes, allowing the flavors to meld.
  9. Serve hot, optionally garnished with additional shredded cheddar cheese.
