Instructions
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
Make the Dough:
In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave for 1 minute, stirring halfway, until melted and combined.
Add almond flour, baking powder, egg, garlic powder, and Italian seasoning to the cheese mixture. Mix well until a dough forms. Knead it with your hands if necessary.
Prepare the Filling:
In a small bowl, mix ricotta, mozzarella, Parmesan, pepperoni (or sausage), marinara (if using), and spinach. Set aside.
Assemble the Chunks:
Roll the dough between two sheets of parchment paper into a rectangle, about ¼ inch thick.
Cut the dough into 3-inch squares.
Place 1-2 teaspoons of filling in the center of each square.
Fold the squares into triangles or rectangles, sealing the edges by pressing them together with your fingers or a fork.
Bake:
Arrange the calzone chunks on the prepared baking sheet.
Bake for 12-15 minutes, or until golden brown.
