Keto Candy Bars

Ingredients:

For the Chocolate Coating:

  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup coconut oil, melted
  • 1/4 cup powdered erythritol or your preferred keto-friendly sweetener
  • 1/2 tsp vanilla extract

For the Filling:

  • 1/2 cup almond butter (or any nut or seed butter of your choice)
  • 1/4 cup powdered erythritol or your preferred sweetener
  • 2 tablespoons coconut flour
  • 1/4 tsp vanilla extract
  • Pinch of salt

Instructions:

For the Filling:

  1. In a mixing bowl, combine the almond butter, powdered erythritol, coconut flour, vanilla extract, and a pinch of salt. Mix until well combined. The mixture should be thick and dough-like.
  2. Press the mixture into a rectangular or square baking dish lined with parchment paper. Smooth the top to create an even layer. Place it in the refrigerator to chill while you prepare the chocolate coating.

For the Chocolate Coating:

  1. In a mixing bowl, whisk together the melted coconut oil, unsweetened cocoa powder, powdered erythritol, and vanilla extract. The mixture should be smooth and well combined.
  2. Remove the filling from the refrigerator and cut it into individual bars.
  3. Using a fork or toothpick, dip each bar into the chocolate coating mixture, ensuring it’s fully coated. Allow any excess chocolate to drip off.
  4. Place the coated bars on a parchment-lined tray or plate.
  5. Place the tray in the refrigerator or freezer to allow the chocolate to set. This should take about 15-30 minutes.
  6. Once the chocolate has set, remove the bars from the refrigerator or freezer. Store them in an airtight container in the refrigerator.
