Ingredients:

  • For the Cake:

    • 1/4 cup melted butter or coconut oil
    • 1 tsp vanilla extract
    • 1/2 cup finely grated carrots (about 2 medium carrots)
  • For the Cream Cheese Filling:
    • 8 oz cream cheese, softened
    • 1/4 cup powdered erythritol or monk fruit sweetener
    • 1 tsp vanilla extract
    • 2 tbsp heavy cream

Instructions:

  1. Prepare the Cake Roll:
    • Preheat your oven to 350°F (175°C). Grease and line a 15×10-inch baking sheet (or similar size) with parchment paper.
    • In a medium bowl, whisk together the almond flour, coconut flour, baking powder, cinnamon, nutmeg, ginger, and salt.

  2. Make the Cream Cheese Filling:
    • While the cake is cooling, make the filling. In a medium bowl, beat together the softened cream cheese, powdered sweetener, vanilla extract, and heavy cream until smooth and creamy.
  3. Assemble the Cake Roll:
    • Once the cake has cooled completely, gently unroll it from the towel. Spread the cream cheese filling evenly over the surface of the cake, leaving a small border around the edges.
    • Carefully re-roll the cake, this time without the towel. Be gentle to avoid cracking the cake.
    • Place the cake seam-side down on a serving platter.
  4. Serve:
