Keto Cheesy Taco Casserole
Ingredients:
- 1 pound ground beef (you can also use ground turkey or chicken)
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet of taco seasoning (check for low-carb options or make your own)
- 1 cup diced tomatoes (fresh or canned)
- 1 cup diced bell peppers (use any color you prefer)
- 1 cup shredded cheddar cheese (or any cheese you like)
- Salt and pepper to taste
- Optional toppings: sliced avocado, sour cream, chopped cilantro

Instructions:
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onions and garlic and sauté until they become soft and translucent.
- Add the ground beef to the skillet and cook until it’s browned and fully cooked through. Break up the meat with a spatula as it cooks to ensure it’s evenly cooked.
- Once the meat is cooked, drain any excess fat from the skillet.
- Add the taco seasoning to the skillet and stir well to coat the meat evenly.
- Add the diced tomatoes and bell peppers to the skillet, stirring to combine everything. Let it simmer for a few minutes until the vegetables are tender.
- Season with salt and pepper to taste, keeping in mind that the taco seasoning may already contain salt.
- Transfer the mixture from the skillet to a greased casserole dish.
- Sprinkle the shredded cheese evenly over the top of the mixture in the casserole dish.
- Place the casserole dish in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.
- Once done, remove the casserole from the oven and let it cool for a few minutes before serving.
