Keto Chicken Burrito

Keto Chicken Burrito

Ingredients:

For the Chicken:

  • 1 lb (450g) chicken breast or thighs, boneless and skinless
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper, to taste
  • 1 tbsp lime juice (optional, for a citrusy flavor)

For the Burrito:

  • 4 keto-friendly tortillas (like almond flour tortillas or coconut flour tortillas) or large lettuce leaves for wraps
  • 1/2 cup shredded cheddar cheese (or your favorite cheese)
  • 1/4 cup sour cream (optional, for extra creaminess)
  • 1/4 cup guacamole (or sliced avocado)
  • 1/4 cup salsa (make sure it’s low-carb, or homemade)
  • 1/4 cup shredded lettuce (optional)
  • Fresh cilantro, chopped (optional, for garnish)

Instructions:

  1. Cook the chicken:
    • Season the chicken breasts with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
    • Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 5-7 minutes per side until fully cooked (internal temperature should reach 165°F or 75°C).
    • Once cooked, remove the chicken from the pan and let it rest for a few minutes before slicing or shredding it.
  2. Assemble the burrito:
    • If using keto-friendly tortillas, warm them up in a skillet for about 1 minute per side to make them more pliable.
    • If using lettuce leaves, make sure they are large enough to hold the fillings and not tear.
    • In the center of each tortilla or lettuce leaf, add a few spoonfuls of shredded chicken.
    • Top with cheese, sour cream, guacamole, salsa, shredded lettuce, and cilantro (if desired).
  3. Roll the burrito:
    • Carefully fold the sides of the tortilla or lettuce leaf over the fillings, then roll it up tightly to form a burrito. If you’re using a tortilla, you can warm it in a pan for 1-2 minutes on each side to get it crispy (optional).
  4. Serve:
    • Serve your Keto Chicken Burrito immediately, or slice it in half for easier serving. Enjoy it with a side of extra guacamole or salsa!

Tips:

  • Make-ahead: You can cook the chicken ahead of time and store it in the fridge for up to 3 days, making it even easier to assemble the burrito later.
  • Customizations: You can add extra toppings like shredded cheese, jalapeños, or olives to suit your taste.
  • Spicy version: Add some hot sauce or chopped fresh chilies for an extra kick.

This Keto Chicken Burrito is a delicious, satisfying meal that’s perfect for anyone following a low-carb diet! Enjoy the flavors of a burrito without the carbs.
