Keto Chicken Nuggets

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Cooking spray or olive oil (for frying)

 

Instructions

  1. Prepare the Chicken: In a large bowl, add the cut chicken pieces. Season with salt, pepper, garlic powder, onion powder, and paprika. Toss to ensure the chicken is evenly coated with the seasonings.
  2. Set Up a Breading Station: In one bowl, beat the egg. In another bowl, combine the almond flour and grated Parmesan cheese.
  3. Bread the Chicken: Dip each piece of seasoned chicken into the egg, allowing any excess to drip off. Then, coat it in the almond flour and Parmesan mixture, pressing gently to ensure the coating adheres. Place the breaded chicken nuggets on a plate or baking sheet.
  4. Cook the Nuggets:
    • Frying Method: In a large skillet, heat about 1/4 inch of olive oil over medium heat. Once hot, carefully add the breaded chicken nuggets in a single layer (you may need to do this in batches). Fry for 3-4 minutes on each side, or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain any excess oil.
    • Baking Method: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange the breaded chicken nuggets on the sheet and spray lightly with cooking spray. Bake for 15-20 minutes, flipping halfway through, until golden brown and cooked through.
  5. Serve: Once cooked, serve your Keto Chicken Nuggets warm with your favorite dipping sauces, such as sugar-free barbecue sauce, ranch dressing, or hot sauce.
