Keto Chicken Nuggets Salad

Ingredients:

  • 2 cups mixed salad greens
  • 1 medium tomato, diced
  • 1 small cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 4 ounces cooked chicken nuggets (keto-friendly or homemade using almond flour or pork rinds for coating)
  • 2 tablespoons keto-friendly ranch dressing
  • Salt and pepper to taste

Instructions:

  1. In a large salad bowl, combine the mixed salad greens, diced tomato, sliced cucumber, and thinly sliced red onion.
  2. Cook the chicken nuggets according to the package instructions or using a keto-friendly recipe. If making your own, coat the chicken with almond flour or crushed pork rinds for a keto-friendly crust.
  3. Once the chicken nuggets are cooked and crispy, let them cool for a few minutes before adding them to the salad.
  4. Cut the chicken nuggets into bite-sized pieces and place them on top of the salad.
  5. Drizzle the keto-friendly ranch dressing over the salad.
