Keto Chicken Quesadilla Recipe

Ingredients

  • For the Tortillas:
    • 1 cup shredded mozzarella cheese
    • ½ cup almond flour
    • 1 tbsp cream cheese
    • 1 large egg
  • For the Filling:
    • 1 cup cooked chicken breast, shredded
    • ½ cup shredded cheddar cheese
    • ¼ cup diced bell peppers (optional for a bit of crunch)
    • 2 tbsp chopped onions
    • 1 tbsp sour cream
    • 1 tsp taco seasoning
    • Salt and pepper to taste
  • For Serving:
    • Salsa or sour cream

Instructions

  1. Prepare the Tortillas:
    • Preheat your oven to 350°F (175°C).
    • In a microwave-safe bowl, melt the mozzarella cheese and cream cheese for about 1 minute, stirring halfway.
    • Add almond flour and the egg to the melted cheese, mixing well until a dough forms.
    • Roll out the dough between two sheets of parchment paper until it reaches a thin, tortilla-like thickness.
    • Cut the dough into circles (using a small bowl or lid works well) for your tortillas.
    • Bake for 5-7 minutes until lightly golden, then set aside to cool.
  2. Prepare the Filling:
    • In a mixing bowl, combine shredded chicken, cheddar cheese, bell peppers, onions, sour cream, taco seasoning, salt, and pepper.
    • Stir until the mixture is well combined.
  3. Assemble and Cook the Quesadilla:
    • Place one tortilla on a heated skillet over medium heat.
    • Add half of the chicken mixture evenly over the tortilla and top with another tortilla.
    • Cook for 2-3 minutes on each side until the cheese melts and the quesadilla is golden brown and crisp.
  4. Serve:
    • Slice the quesadilla into wedges.
    • Serve with salsa, sour cream, and avocado slices or guacamole if desired.
