Ingredients

- ½ cup almond flour

- 1 large egg

Instructions
- Prepare the Tortillas:
- Preheat your oven to 350°F (175°C).
- In a microwave-safe bowl, melt the mozzarella cheese and cream cheese for about 1 minute, stirring halfway.
- Add almond flour and the egg to the melted cheese, mixing well until a dough forms.
- Roll out the dough between two sheets of parchment paper until it reaches a thin, tortilla-like thickness.
- Cut the dough into circles (using a small bowl or lid works well) for your tortillas.
- Bake for 5-7 minutes until lightly golden, then set aside to cool.
- Prepare the Filling:
- In a mixing bowl, combine shredded chicken, cheddar cheese, bell peppers, onions, sour cream, taco seasoning, salt, and pepper.
- Stir until the mixture is well combined.
- Assemble and Cook the Quesadilla:
- Place one tortilla on a heated skillet over medium heat.
- Add half of the chicken mixture evenly over the tortilla and top with another tortilla.
- Cook for 2-3 minutes on each side until the cheese melts and the quesadilla is golden brown and crisp.

- Slice the quesadilla into wedges.
