Keto Chinese Chicken Cabbage Stir-Fry

Ingredients:

  • 1 lb chicken breast or thighs, thinly sliced
  • 1/2 medium green cabbage, shredded (about 4 cups)
  • 1/2 medium red bell pepper, thinly sliced (optional for color)
  • 1/2 medium onion, thinly sliced
  • 2 tbsp coconut oil or avocado oil, divided
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce or coconut aminos
  • 1 tbsp rice vinegar (optional, for added flavor)
  • 1/2 tsp sesame oil (optional, for aroma)
  • Salt and pepper, to taste
  • 1/4 tsp red pepper flakes (optional, for spice)
  • Chopped green onions and sesame seeds for garnish

Instructions:

Step 1: Prepare the Chicken

  1. Season the sliced chicken with a pinch of salt and pepper.

Step 2: Cook the Chicken

  1. In a large skillet or wok, heat 1 tbsp of oil over medium-high heat.
  2. Add the chicken and cook until browned and cooked through, about 4–5 minutes. Remove the chicken from the skillet and set it aside.

Step 3: Sauté the Vegetables

  1. In the same skillet, add the remaining 1 tbsp of oil.
  2. Add the onion, garlic, and ginger, and sauté for about 1 minute until fragrant.
  3. Add the cabbage and red bell pepper (if using). Stir-fry for about 3–5 minutes until the cabbage is tender but still crisp.

Step 4: Add the Sauce and Chicken

  1. Return the cooked chicken to the skillet.
  2. Pour in the soy sauce (or coconut aminos), rice vinegar (if using), sesame oil, and red pepper flakes (if using).
  3. Stir everything together and cook for another 1–2 minutes, allowing the flavors to combine.

Step 5: Serve

  1. Remove from heat and garnish with chopped green onions and sesame seeds.
