Keto Chinese Chicken Cabbage Stir-Fry
Ingredients:
- 1 lb chicken breast or thighs, thinly sliced
- 1/2 medium green cabbage, shredded (about 4 cups)
- 1/2 medium red bell pepper, thinly sliced (optional for color)
- 1/2 medium onion, thinly sliced
- 2 tbsp coconut oil or avocado oil, divided
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp soy sauce or coconut aminos
- 1 tbsp rice vinegar (optional, for added flavor)
- 1/2 tsp sesame oil (optional, for aroma)
- Salt and pepper, to taste
- 1/4 tsp red pepper flakes (optional, for spice)
- Chopped green onions and sesame seeds for garnish
Instructions:
Step 1: Prepare the Chicken
- Season the sliced chicken with a pinch of salt and pepper.
Step 2: Cook the Chicken
- In a large skillet or wok, heat 1 tbsp of oil over medium-high heat.
- Add the chicken and cook until browned and cooked through, about 4–5 minutes. Remove the chicken from the skillet and set it aside.
Step 3: Sauté the Vegetables
- In the same skillet, add the remaining 1 tbsp of oil.
- Add the onion, garlic, and ginger, and sauté for about 1 minute until fragrant.
- Add the cabbage and red bell pepper (if using). Stir-fry for about 3–5 minutes until the cabbage is tender but still crisp.
Step 4: Add the Sauce and Chicken
- Return the cooked chicken to the skillet.
- Pour in the soy sauce (or coconut aminos), rice vinegar (if using), sesame oil, and red pepper flakes (if using).
- Stir everything together and cook for another 1–2 minutes, allowing the flavors to combine.
Step 5: Serve
- Remove from heat and garnish with chopped green onions and sesame seeds.
