Ingredients
- 1 cup almond meal flour
- 1/2 cup of melted salted butter
- 2 cups chopped nuts (pecans or walnuts work best)
- 8 oz softened cream cheese
- 3/4 cup Erythritol sweetner
- 16 oz Original Cool Whip softened
- 2 boxes of instant sugar-free chocolate pudding
- 4 cups of cold skim milk
Instructions
- Preheat oven to 325F.
- Combine almond flour, melted butter and 1.5 cups of the chopped nuts in a deep baking pie pan.
- Bake it for 20 minutes or until the edges start to turn golden brown. Remove and set aside to cool.
- Using a mixer, combine the cream cheese, erythritol and half or the cool whip. Beat it on low until smooth. Layer this mixture on top on the baked crust and smooth it out.
- In a large bowl, combine cold milk and pudding mix. Whisk it for 2 minutes or follow directions on the box. Let it set for 5 minutes. Once it is set, pour it over the cream cheese mixture. This is the 3 layer.
- Cover the pudding with dollops of cool whip and smooth it over. Top it off with the remaining 1/2 cup of chopped nuts.
