Keto Chocolate Peanut Butter Balls

Ingredients:

  • 1 cup natural peanut butter (unsweetened)
  • 1/2 cup coconut flour
  • 1/4 cup powdered erythritol (or another keto-friendly sweetener)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • A pinch of salt

Coating:

  • 3 oz dark chocolate (at least 70% cocoa), chopped
  • 1 tablespoon coconut oil

Instructions:

  1. In a bowl, mix together peanut butter, coconut flour, powdered erythritol, cocoa powder, melted coconut oil, vanilla extract, and a pinch of salt. The mixture should be thick and well combined.
  2. Shape the mixture into small balls and place them on a parchment-lined tray.
  3. In a microwave-safe bowl, melt the dark chocolate and coconut oil in short intervals, stirring until smooth.
  4. Dip each peanut butter ball into the melted chocolate, coating it evenly. Use a fork to lift the coated ball, allowing excess chocolate to drip off.
  5. Place the coated balls back on the parchment-lined tray and let them cool.
  6. Once the chocolate coating has hardened, store the keto chocolate peanut butter balls in an airtight container in the refrigerator.
