Keto Chocolate Peanut Butter Fudge

Ingredients:

  • 1 cup unsweetened creamy peanut butter (or almond butter if preferred)
  • 1/2 cup coconut oil, melted
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered erythritol (or your preferred keto-friendly sweetener)
  • 1/2 tsp vanilla extract
  • Pinch of salt (optional, to enhance flavors)

Instructions:

Step 1: Prepare the Fudge Mixture

  1. In a mixing bowl, combine the peanut butter and melted coconut oil. Stir until smooth and well-blended.
  2. Add the cocoa powder, powdered erythritol, vanilla extract, and a pinch of salt (if using). Stir until all ingredients are well combined and smooth.

Step 2: Pour into a Pan

  1. Line a small baking dish (8×8 inch works well) with parchment paper, leaving some overhang on the sides to easily lift the fudge out later.
  2. Pour the fudge mixture into the lined pan and spread it out evenly with a spatula.

Step 3: Chill and Set

  1. Place the pan in the refrigerator for at least 1–2 hours, or until the fudge is firm.
    • For faster results, you can place it in the freezer for about 30 minutes.

Step 4: Slice and Serve

  1. Once the fudge is set, lift it out of the pan using the parchment paper.
  2. Cut into small squares and enjoy!

Storage

  • Store the fudge in an airtight container in the refrigerator for up to 2 weeks, or in the freezer for longer storage.
