Ingredients:

  • 4 large eggs, separated
  • 1/4 cup cream cheese, softened
  • 1 tablespoon coconut flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: sweetener of choice, to taste
  • Cooking oil for frying

Instructions:

  1. In a mixing bowl, separate the egg whites and yolks. Set aside.
  2. In another bowl, whisk together the cream cheese, coconut flour, baking powder, salt, and optional sweetener until smooth.
  3. Beat the egg whites with an electric mixer until stiff peaks form.
  4. Gently fold the cream cheese mixture into the beaten egg whites until well combined.
  5. Heat cooking oil in a skillet over medium heat.
  6. Using a spoon, drop spoonfuls of the batter into the hot oil, forming fritter-sized portions.
  7. Fry the fritters on both sides until they are golden brown and cooked through, about 2-3 minutes per side.
  8. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
