Keto Cloud Bread Recipe
Ingredients:
- 3 large eggs
- 3 oz (about 85g) cream cheese, softened
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon sweetener (like Stevia, Monk Fruit, or Erythritol) (optional)
- 1/2 teaspoon garlic powder or onion powder (optional for extra flavor)
Instructions:

Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.

Separate the eggs: Carefully separate the egg whites from the egg yolks into two separate bowls.

Beat the egg whites: In a large mixing bowl, use a hand mixer or stand mixer to beat the egg whites with a pinch of salt until stiff peaks form. This will take around 3–5 minutes.

Mix the egg yolks and cream cheese: In a separate bowl, whisk the egg yolks, softened cream cheese, baking powder, and any optional seasonings or sweeteners until smooth.

Combine the mixtures: Gently fold the egg yolk mixture into the beaten egg whites. Be careful not to deflate the whites. Use a spatula to combine them thoroughly.

Scoop onto baking sheet: Spoon the batter onto the parchment paper, forming 6–8 rounds, about 3–4 inches in diameter. Flatten them slightly with the back of the spoon.

Bake for 25–30 minutes or until the cloud breads are golden brown and set in the middle.

Cool on a wire rack before serving. These are best enjoyed fresh but can be stored in an airtight container for a couple of days in the fridge.
Tips:
- If you’d like a slightly sweet version, you can add a little bit of your favorite keto-friendly sweetener.
- For savory flavor, adding garlic powder or fresh herbs can make them more versatile.
This cloud bread is a great substitute for regular bread and works perfectly for sandwiches, burgers, or even just as a snack with butter or cheese!
