These keto-friendly bars have a rich  coconut filling wrapped in a  sugar-free chocolate coating. They’re perfect for when you crave a sweet treat while staying low-carb.

Ingredients

  • 2 cups unsweetened shredded coconut
    Make sure it’s finely shredded to help the bars hold together.
  • ½ cup coconut oil (or butter), melted
    Coconut oil adds flavor and moisture to the filling. Butter can also be used for a richer taste.
  • 3 tbsp powdered erythritol (or powdered monk fruit sweetener)
    Powdered sweetener ensures a smooth texture in the filling.
  • ½ tsp vanilla extract
    For a touch of sweetness and flavor depth.
  • Pinch of salt
    Enhances the flavor of the coconut and balances the sweetness.
  • 1 cup sugar-free chocolate chips (like Lily’s)
    Ensure they are keto-friendly with no added sugar.
  • 1 tbsp coconut oil (for melting with the chocolate)
    This helps the chocolate melt smoothly and creates a glossy finish.

Instructions

  1. Prepare the Coconut Filling:
    In a medium-sized mixing bowl, combine the unsweetened shredded coconutmelted coconut oil (or butter), powdered erythritolvanilla extract, and a pinch of salt (image 1). Use a spatula or wooden spoon to mix the ingredients until well combined. The mixture should be moist and sticky enough to press together but not too wet. If the mixture seems dry, add a bit more melted coconut oil.
  2. Shape the Bars:
    Using about 2 tablespoons of the coconut mixture, shape it into small rectangular bars (image 2). You can use your hands to form the bars or use a small rectangular mold to get uniform shapes. Place the formed bars onto a baking sheet lined with parchment paper (image 3), making sure they don’t touch each other.Tip: If the mixture is too sticky, wet your hands slightly to make shaping easier.
  3. Chill the Bars:
    Once all the bars are formed, place the baking sheet in the freezer for 20-30 minutes. This step is crucial for firming up the bars, making them easier to coat in chocolate later. While the bars are chilling, you can prepare the chocolate.
  4. Melt the Chocolate:
    In a double boiler or using a microwave-safe bowl, melt the sugar-free chocolate chips with 1 tablespoon of coconut oil (image 4). If using a microwave, heat in 30-second intervals, stirring after each session to ensure the chocolate melts evenly and doesn’t burn. The coconut oil helps thin the chocolate, making it easier to coat the bars and giving the chocolate a glossy finish.Tip: Be patient when melting the chocolate; overheating can cause it to seize up and become grainy.
  5. Coat the Bars in Chocolate:
    Remove the coconut bars from the freezer. One by one, dip each bar into the melted chocolate, using a fork to turn it so it’s fully coated (image 5). Let any excess chocolate drip off before placing the bar back onto the parchment-lined baking sheet. Repeat this process until all the bars are coated.Tip: If the chocolate starts to thicken while coating, you can reheat it gently to keep it smooth.
  6. Chill Again:
    After coating all the bars in  chocolate, place the baking sheet back in the fridge or freezer for 10-15 minutes to let the chocolate set completely (image 6). Once the chocolate is firm, your keto  coconut bars are ready to enjoy!

Storage Tips

  • Store these bars in an airtight container in the fridge for up to 1 week.
  • They also freeze well for up to 3 months. Simply thaw in the fridge before eating.

Tips and Variations

  • Add a Nutty Twist: For added texture and flavor, you can press a whole almond into the center of each bar before dipping them in chocolate. This will give your bars a taste similar to a popular almond-coconut candy.
  • Use Dark Chocolate: For an even more keto-friendly option, consider using a 90% dark chocolate bar melted with coconut oil instead of sugar-free chocolate chips. Dark chocolate has fewer carbs and more rich flavor.
  • Flavored Extracts: Feel free to experiment with different extracts like almond or coconut extract in place of vanilla for an extra boost of flavor.
