Keto Cracker Barrel Meatloaf

Ingredients:

For the Meatloaf:

  • 1 ½ lbs ground beef (preferably 80/20)
  • 1 cup almond flour or crushed pork rinds
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/4 cup sugar-free ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tbsp mustard
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • Salt and pepper to taste

For the Glaze:

  • 1/4 cup sugar-free ketchup
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp sugar-free sweetener (like erythritol or stevia)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

 

  1. Prepare the Meatloaf Mixture:
    • In a large mixing bowl, combine the ground beef, almond flour (or pork rinds), onion, garlic, eggs, sugar-free ketchup, Worcestershire sauce, mustard, parsley, thyme, salt, and pepper.
    • Mix gently but thoroughly until all ingredients are well incorporated.
  2. Shape the Meatloaf:
    • Transfer the mixture to the prepared baking sheet or loaf pan and shape it into a loaf.
  3. Prepare the Glaze:
    • In a small bowl, whisk together the sugar-free ketchup, Dijon mustard, apple cider vinegar, and sweetener.
    • Spread half of the glaze evenly over the top of the meatloaf.
  4. Bake the Meatloaf:
    • Place the meatloaf in the preheated oven and bake for 40-45 minutes, or until the internal temperature reaches 160°F (71°C).
    • After 30 minutes, spread the remaining glaze over the meatloaf and continue baking.
  5. Rest and Serve:
    • Once baked, let the meatloaf rest for 10 minutes before slicing.
