Keto Creamy Cabbage Soup

Ingredients:

  • 1 small head of green cabbage, chopped into small pieces
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 cups vegetable or chicken broth (preferably low-sodium)
  • 1 cup heavy cream
  • 1/2 cup water
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
  • Optional: a pinch of red pepper flakes for some heat
  • Optional toppings: grated Parmesan cheese, crispy bacon bits, or fresh herbs

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until they become translucent and fragrant, about 3-5 minutes.
  2. Add the chopped cabbage to the pot and continue to cook, stirring occasionally, for about 5 minutes, until the cabbage starts to wilt.
  3. Pour in the vegetable or chicken broth, and add the dried thyme, dried rosemary, salt, and black pepper. If you like a little heat, add a pinch of red pepper flakes. Stir well to combine.
  4. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let the soup simmer for about 20-25 minutes, or until the cabbage is tender.
  5. Using an immersion blender or a regular blender, puree the soup until it’s smooth and creamy. Be careful when blending hot liquids. If you’re using a regular blender, blend in batches, allowing the soup to cool slightly before blending.
  6. Return the blended soup to the pot and place it over low heat. Stir in the heavy cream and water, and continue to cook for an additional 5 minutes, making sure the soup is heated through.
  7. Taste the soup and adjust the seasonings if necessary.
