- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and black pepper to taste
- Optional: a pinch of red pepper flakes for some heat

Instructions:
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until they become translucent and fragrant, about 3-5 minutes.
- Add the chopped cabbage to the pot and continue to cook, stirring occasionally, for about 5 minutes, until the cabbage starts to wilt.
- Pour in the vegetable or chicken broth, and add the dried thyme, dried rosemary, salt, and black pepper. If you like a little heat, add a pinch of red pepper flakes. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let the soup simmer for about 20-25 minutes, or until the cabbage is tender.
- Using an immersion blender or a regular blender, puree the soup until it’s smooth and creamy. Be careful when blending hot liquids. If you’re using a regular blender, blend in batches, allowing the soup to cool slightly before blending.
- Return the blended soup to the pot and place it over low heat. Stir in the heavy cream and water, and continue to cook for an additional 5 minutes, making sure the soup is heated through.
- Taste the soup and adjust the seasonings if necessary.
