Ingredients for the Crepes:

  • 1/2 cup almond flour (blanched)
  • 2 large eggs
  • 1/4 cup unsweetened almond milk (or other low-carb milk alternative)
  • 1/4 teaspoon baking powder (optional for fluffier crepes)
  • 1/2 teaspoon vanilla extract (for sweet crepes)
  • Pinch of salt
  • 1 tablespoon butter or coconut oil (for cooking)

For Sweet Filling (optional):

  • 4 oz cream cheese (softened)
  • 2 tablespoons powdered erythritol or another keto-friendly sweetener
  • 1/2 teaspoon vanilla extract
  • Fresh berries (optional, for topping)

For Savory Filling (optional):

  • 4 oz cream cheese (softened)
  • 2 tablespoons sour cream
  • 1 tablespoon chopped fresh herbs (e.g., chives, parsley)
  • Salt and pepper to taste
  • Sliced deli meats or veggies (e.g., smoked salmon, cucumber, or spinach)

Instructions:

1. Make the Crepes:

  • In a bowl, whisk together the almond flour, eggs, almond milk, baking powder, vanilla extract (if using for sweet crepes), and a pinch of salt until smooth.
  • Heat a non-stick skillet over medium heat and add a little butter or coconut oil to coat the pan.
  • Pour about 2 tablespoons of the batter into the pan, swirling it to spread the batter evenly across the surface.
  • Cook for 1-2 minutes until the edges begin to lift and the bottom is golden brown, then flip and cook the other side for another 30 seconds to 1 minute.
  • Remove the crepe from the pan and place it on a plate. Repeat with the remaining batter to make more crepes.

2. Prepare the Fillings:

  • Sweet Filling: In a small bowl, beat together the softened cream cheese, powdered erythritol, and vanilla extract until smooth and creamy. You can also fold in some fresh berries if you’d like.
  • Savory Filling: In a bowl, mix the softened cream cheese, sour cream, chopped herbs, and season with salt and pepper. Add sliced deli meats or veggies of choice.

3. Assemble the Crepe Rolls:

  • Spread a thin layer of the sweet or savory filling evenly over the surface of each crepe.
  • Roll up the crepes gently, folding the sides in as you roll to keep the filling in place.
  • Slice into smaller rolls or serve whole.

4. Serve:

  • For sweet crepes, garnish with additional berries or a drizzle of sugar-free syrup if desired.
  • For savory crepes, garnish with extra fresh herbs or enjoy them as-is.

Tips:

  • If you prefer your crepes to be thinner, simply add a little more almond milk to the batter.
