- 1/4 cup heavy cream
- 1 tbsp powdered erythritol (optional for sweetness)
Instructions:
1. Prepare the Crust:

- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix almond flour, melted butter, powdered sweetener, and vanilla extract until well combined.
- Press the mixture into the bottom of an 8×8-inch baking dish to form an even crust.
- Bake the crust for 10-12 minutes, or until lightly golden brown. Allow it to cool completely.
2. Make the Cream Filling:
- In a saucepan, combine heavy cream, almond milk, powdered sweetener, and egg yolks. Heat over medium heat while whisking constantly.
- Continue whisking until the mixture thickens enough to coat the back of a spoon. This may take about 5-7 minutes.
- Remove from heat and stir in vanilla extract and butter. If you want it thicker, add coconut flour gradually until desired thickness.
- Let the filling cool for about 10 minutes, then pour it over the cooled crust. Spread evenly.
- Place the dish in the fridge to chill for at least 1 hour, allowing the filling to set.
3. Make the Chocolate Topping:
- In a small saucepan, heat the heavy cream over low heat until warm (not boiling).
- Remove from heat and add the chopped dark chocolate. Stir until the chocolate is fully melted and smooth.
- Stir in the powdered sweetener if you prefer it sweeter.
- Pour the chocolate over the chilled cream filling and spread evenly.
4. Final Chill:
- Refrigerate the cake for an additional hour or until fully set. This will give the flavors time to meld and the topping to firm up.
