Keto Foil Salmon and Asparagus in Garlic Sauce

Ingredients:

  • 4 salmon fillets
  • 1 bunch asparagus, trimmed
  • 4 cloves garlic, minced
  • 4 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • Lemon slices for garnish
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Place each salmon fillet on a piece of foil large enough to fold over and seal. Arrange asparagus around each fillet.
  3. In a small bowl, mix together minced garlic, olive oil, lemon juice, dried oregano, salt, and pepper.
  4. Spoon the garlic sauce over each salmon fillet and asparagus.
  5. Fold the foil over the salmon and asparagus, sealing the edges to create a packet.
  6. Place the foil packets on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Carefully open the foil packets, garnish with lemon slices and fresh parsley.
