  • Salt and pepper to taste
  • 2 tbsp olive oil or avocado oil (for frying)

Instructions:

1. Prepare the zucchini:

  • Wash and peel the zucchini if you prefer (though you can leave the skin on for a little extra texture).
  • Slice the zucchini into long, thin strips—about the size of traditional French fries.

2. Coat the zucchini:

  • In a large bowl, mix the almond flour, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  • Toss the zucchini strips in the mixture, making sure each piece is evenly coated. You can also use a little egg wash (a beaten egg) to help the coating stick, but it’s optional if you want to keep it lighter.

3. Cook the fries:

  • Option 1: Frying – Heat olive oil in a skillet over medium heat. Once the oil is hot, add the zucchini strips in batches and fry for 2-3 minutes per side, until golden and crispy. Be sure to not overcrowd the pan.
  • Option 2: Baking – Preheat your oven to 425°F (220°C). Lay the zucchini fries out on a parchment-lined baking sheet in a single layer. Bake for 20-25 minutes, flipping halfway through, until crispy and golden brown.

4. Serve:

  • Once your fries are crispy and golden, take them out and let them drain on paper towels if you’ve fried them.
