Keto French Toast Roll-Ups
Ingredients:
- For the Roll-Ups:
- 4 slices of keto-friendly bread (you can use low-carb store-bought bread or homemade almond flour bread)
- 2 oz cream cheese, softened (or sugar-free berry jam, if you prefer)
- 2 large eggs
- 1/4 cup heavy cream
- 1/2 tsp vanilla extract
- 1 tbsp powdered erythritol or preferred keto sweetener
- For Coating:
- 1/4 cup powdered erythritol
- 1 tsp cinnamon
- For Frying:
- 2 tbsp butter
Instructions:
Step 1: Prepare the Filling
- If using cream cheese, spread a thin layer of cream cheese on one side of each bread slice. Alternatively, you can use a sugar-free berry jam as a filling.
Step 2: Roll Up the Bread
- Roll each slice of bread tightly around the filling to form a log. Press gently to keep it from unrolling.
Step 3: Prepare the Egg Mixture
- In a shallow bowl, whisk together the eggs, heavy cream, vanilla extract, and powdered erythritol until well combined.
Step 4: Coat and Fry
- Heat a large skillet over medium heat and add butter.
- Dip each roll-up in the egg mixture, ensuring it’s fully coated.
- Place the roll-ups in the skillet and cook for 2–3 minutes on each side, or until golden brown.
Step 5: Cinnamon Coating
- In a small bowl, combine the powdered erythritol and cinnamon.
- Roll each fried roll-up in the cinnamon mixture while still warm, ensuring it’s fully coated.
Step 6: Serve
- Serve warm with a drizzle of sugar-free syrup or a few fresh berries on the side.
