Ingredients:
- 1 1/2 cups shredded mozzarella cheese
- 2 oz cream cheese
- 1 cup almond flour
- 1 tsp baking powder
- 1 large egg
- 1/2 tsp garlic powder
- 1/4 cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped (for garnish)
Garlic Butter Topping:
- 2 tbsp butter, melted
- 1 clove garlic, minced
- 1/4 tsp garlic powder
- 1 tbsp grated Parmesan cheese
- Salt, to taste
Instructions:
Step 1: Preheat Oven
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Step 2: Make the Dough
- In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until the cheeses are melted and smooth.
- In a separate bowl, whisk together the almond flour, baking powder, and garlic powder.
- Add the melted cheese mixture and egg to the almond flour mixture. Mix until a dough forms. It may be sticky, so you can lightly oil your hands if needed.
Step 3: Shape the Knots
- Divide the dough into 8 equal portions.
- Roll each portion into a rope and gently tie it into a knot shape. Place the knots on the prepared baking sheet.
Step 4: Prepare the Garlic Butter Topping
- In a small bowl, combine the melted butter, minced garlic, garlic powder, and a pinch of salt.
- Brush half of the garlic butter mixture onto the knots before baking.
Step 5: Bake
- Bake in the preheated oven for 12–15 minutes, or until the knots are golden brown.
Step 6: Add Parmesan and Garnish
- Remove from the oven and brush the remaining garlic butter over the warm knots.
- Sprinkle with grated Parmesan cheese and chopped parsley.
