Keto Garlic Parmesan Knots

Ingredients:

  • 1 1/2 cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 cup almond flour
  • 1 tsp baking powder
  • 1 large egg
  • 1/2 tsp garlic powder
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped (for garnish)

Garlic Butter Topping:

  • 2 tbsp butter, melted
  • 1 clove garlic, minced
  • 1/4 tsp garlic powder
  • 1 tbsp grated Parmesan cheese
  • Salt, to taste

Instructions:

Step 1: Preheat Oven

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2: Make the Dough

  1. In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until the cheeses are melted and smooth.
  2. In a separate bowl, whisk together the almond flour, baking powder, and garlic powder.
  3. Add the melted cheese mixture and egg to the almond flour mixture. Mix until a dough forms. It may be sticky, so you can lightly oil your hands if needed.

Step 3: Shape the Knots

  1. Divide the dough into 8 equal portions.
  2. Roll each portion into a rope and gently tie it into a knot shape. Place the knots on the prepared baking sheet.

Step 4: Prepare the Garlic Butter Topping

  1. In a small bowl, combine the melted butter, minced garlic, garlic powder, and a pinch of salt.
  2. Brush half of the garlic butter mixture onto the knots before baking.

Step 5: Bake

  1. Bake in the preheated oven for 12–15 minutes, or until the knots are golden brown.

Step 6: Add Parmesan and Garnish

  1. Remove from the oven and brush the remaining garlic butter over the warm knots.
  2. Sprinkle with grated Parmesan cheese and chopped parsley.
