Keto Greek Spanakopita

Ingredients:

  • For the dough:
    • 2 cups almond flour
    • 1/4 cup coconut flour
    • 1/4 teaspoon baking powder
    • 1/4 teaspoon salt
    • 2 large eggs
    • 1/4 cup melted butter or olive oil
    • 2 tablespoons cold water

 

  • For the filling:
    • 3 cups fresh spinach (or 2 cups frozen spinach, thawed and drained)
    • 1 cup feta cheese, crumbled
    • 1/2 cup ricotta cheese
    • 1/2 cup grated Parmesan cheese
    • 1/4 cup chopped fresh dill
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 2 large eggs
    • Salt and pepper, to taste
    • Olive oil, for greasing

Instructions:

  1. Make the dough:
    • Preheat your oven to 350°F (175°C) and lightly grease a pie dish with olive oil.
    • In a bowl, combine the almond flour, coconut flour, baking powder, and salt.
    • Add the eggs, melted butter, and cold water. Mix until a dough forms. If it’s too sticky, add a little more almond flour. Press the dough into the prepared pie dish to form a crust, going up the edges.
    • Bake for 10-12 minutes, or until the crust is lightly golden. Set aside to cool.
  2. Prepare the filling:
    • In a large skillet, heat some olive oil over medium heat. Sauté the chopped onion and garlic until softened and fragrant.
    • Add the spinach (if using fresh, cook until wilted). Remove any excess moisture if using thawed frozen spinach. Stir in the dill and cook for another 2-3 minutes, then remove from heat.
    • In a separate bowl, whisk together the eggs, feta, ricotta, Parmesan, salt, and pepper.
    • Combine the egg mixture with the spinach and stir well to combine.
  3. Assemble the Spanakopita:
    • Pour the spinach mixture into the cooled crust and spread evenly.
    • Bake the Spanakopita for 25-30 minutes, or until the filling is set and golden on top.
  4. Serve:
    • Allow the Spanakopita to cool slightly before slicing and serving. Enjoy your keto-friendly Greek spinach pie!
