Keto lemmon mug cake

Ingredients:

  • 3 tbsp almond flour
  • 1 tbsp coconut flour
  • 1 tbsp erythritol (or any sweetener of your choice)
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 tsp lemon zest (optional, for extra flavor)
  • 1 large egg
  • 2 tbsp melted butter (or coconut oil)
  • 1/2 tsp vanilla extract

Instructions:

  1. Prepare the mug:

    • Choose a microwave-safe mug (about 8 oz capacity).
  2. Mix the dry ingredients:

    • In the mug, combine the almond flour, coconut flour, erythritol, baking powder, and a pinch of salt. Stir them together until evenly mixed.
  3. Add the wet ingredients:

    • To the dry ingredients, add the egg, melted butter, lemon juice, lemon zest (if using), and vanilla extract. Stir everything together until well combined and smooth.
  4. Microwave:

    • Microwave the mug cake on high for 1 minute and 20 seconds to 1 minute and 30 seconds. Check the cake; it should be set but still moist in the center. If it needs a bit more time, microwave for an additional 10-15 seconds.
  5. Let it cool slightly:

    • Let the cake sit for a minute or two to cool down a bit.
  6. Enjoy:

    • You can eat it straight from the mug or transfer it to a plate. Optionally, top with whipped cream or a few fresh berries for an extra treat.
