Ingredients

For the “noodles”:

  • 2 medium zucchinis or eggplants, thinly sliced lengthwise
  • Salt, for sweating the vegetables

For the meat sauce:

  • 1 lb ground beef or Italian sausage
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup sugar-free marinara sauce
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste

For the cheese mixture:

  • 1 cup ricotta cheese or cream cheese
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Prepare the vegetables: Sprinkle the sliced zucchini or eggplant with salt and let them sit for 15-20 minutes to draw out excess moisture. Pat them dry with paper towels to avoid a watery lasagna.

 

  1. Make the meat sauce: In a large skillet over medium heat, cook the ground beef or sausage until browned. Add the diced onion and garlic, and sauté until softened. Stir in the marinara sauce, oregano, red pepper flakes, salt, and pepper. Simmer for 10-15 minutes, allowing the flavors to meld.
  2. Prepare the cheese mixture: In a bowl, mix the ricotta cheese (or cream cheese), egg, and Parmesan cheese until well combined.
  3. Assemble the lasagna: Preheat your oven to 375°F (190°C). In a 9×13-inch baking dish, spread a thin layer of meat sauce on the bottom. Layer with slices of zucchini or eggplant, followed by a layer of the cheese mixture, and a sprinkle of mozzarella. Repeat the layers until all ingredients are used, finishing with a generous layer of mozzarella on top.
  4. Bake: Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  5. Serve: Let the lasagna rest for 10 minutes before slicing. Garnish with fresh basil or parsley if desired. Serve hot and enjoy!
