Ingredients:

    • 1 tsp chili powder

    • Salt and pepper, to taste
  • For the “tortillas”:
    • 2 cups shredded mozzarella cheese
    • 2 tbsp almond flour
  • For frying:
    • 2-3 tbsp avocado oil or olive oil
  • Optional toppings:
    • Sour cream
    • Guacamole
    • Fresh salsa
    • Fresh cilantro

Instructions:

  1. Prepare the Filling: In a mixing bowl, combine the shredded chicken, cheese, green onions, salsa, chili powder, cumin, salt, and pepper. Mix well until all ingredients are fully incorporated.
  2. Make the “Tortillas”: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Divide the mozzarella cheese into two portions. Place each portion on the baking sheet in a circular shape, flattening them out to form two tortillas. Sprinkle almond flour on top of each circle. Bake for 6-8 minutes until the cheese has melted and the edges are slightly browned.

Fry for about 1-2 minutes on each side until golden brown and crispy. Remove from the skillet and place on a paper towel to drain excess oil.
