Ingredients:

  • 1 lb (450g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes (no added sugar)
  • 1 (6 oz) can tomato paste
  • 1 (6 oz) can tomato sauce
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional, for heat)

For the Casserole:

    • 2 cups (200g) shredded mozzarella cheese
    • 1 cup (240g) ricotta cheese
    • 1 cup (240g) sour cream
    • 1 large egg
    • 1 cup (100g) grated Parmesan cheese
    • 1 zucchini, thinly sliced or spiralized
    • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Prepare the Meat Sauce:
    1. In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a spoon as it cooks.
    2. Drain excess fat if necessary.
    3. Add the chopped onion and cook until translucent, about 3-4 minutes.
    4. Stir in the minced garlic and cook for an additional 1 minute.
    5. Add the diced tomatoes, tomato paste, tomato sauce, dried basil, dried oregano, salt, pepper, and red pepper flakes (if using). Stir well.
    6. Reduce heat and let the sauce simmer for 15-20 minutes, stirring occasionally. Adjust seasoning to taste.
  2. Prepare the Casserole Base:
    1. Preheat your oven to 350°F (175°C).
    2. In a mixing bowl, combine the ricotta cheese, sour cream, and egg. Mix until well blended.
    3. Stir in half of the grated Parmesan cheese and season with a pinch of salt and pepper.
  3. Assemble the Casserole:
    1. Lightly grease a 9×13-inch baking dish.
    2. Spread a layer of the meat sauce on the bottom of the dish.
    3. Layer the zucchini slices over the meat sauce.
    4. Spread the ricotta mixture evenly over the zucchini.
    5. Top with the remaining meat sauce.
    6. Sprinkle the shredded mozzarella cheese and the remaining Parmesan cheese on top.
  4. Bake:
    1. Cover the baking dish with foil and bake for 25 minutes.
    2. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
    3. Let the casserole cool for a few minutes before serving.
  5. Garnish and Serve:
    1. Garnish with fresh basil or parsley if desired.
