Ingredients:
For the Eggplant Layers:
- 2 large eggplants, sliced into 1/4-inch rounds
- Salt, for sweating the eggplants
- Olive oil, for brushing the eggplants
For the Meat Sauce:
- 1 lb ground lamb or beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
For the Bechamel Sauce:
- 1/2 cup unsalted butter
- 1/2 cup almond flour
- 2 cups unsweetened almond milk
- 1 cup shredded Parmesan cheese
- Salt and pepper, to taste
- Pinch of nutmeg
Instructions:
- Prepare the Eggplants:
- Sprinkle the eggplant slices with salt and let them sit for about 30 minutes to draw out excess moisture.
- After 30 minutes, pat the eggplant slices dry with paper towels.
- Brush both sides of the eggplant slices with olive oil and grill or bake until tender. Set aside.
- Prepare the Meat Sauce:
- In a skillet over medium heat, cook the ground lamb or beef until browned.
- Add the chopped onion and garlic, cooking until softened.
- Stir in the diced tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for about 15-20 minutes until the sauce thickens. Set aside.
- Prepare the Bechamel Sauce:
- In a saucepan, melt the butter over medium heat.
- Add almond flour and whisk continuously to form a roux.
- Gradually add almond milk while whisking to avoid lumps.
- Continue to cook and whisk until the mixture thickens.
- Stir in Parmesan cheese, salt, pepper, and a pinch of nutmeg. Remove from heat.
- Assemble the Moussaka:
- Preheat your oven to 350°F (175°C).
- In a baking dish, layer half of the grilled eggplant slices.
- Spread the meat sauce over the eggplant layer.
- Add another layer of eggplant slices and top with the bechamel sauce.
- Bake:
- Bake in the preheated oven for 30-40 minutes, or until the top is golden brown and bubbly.
- Serve:
- Allow the moussaka to cool for a few minutes before slicing.
