Ingredients:

For the Eggplant Layers:

  • 2 large eggplants, sliced into 1/4-inch rounds
  • Salt, for sweating the eggplants
  • Olive oil, for brushing the eggplants

For the Meat Sauce:

  • 1 lb ground lamb or beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste

For the Bechamel Sauce:

  • 1/2 cup unsalted butter
  • 1/2 cup almond flour
  • 2 cups unsweetened almond milk
  • 1 cup shredded Parmesan cheese
  • Salt and pepper, to taste
  • Pinch of nutmeg

Instructions:

  1. Prepare the Eggplants:
    • Sprinkle the eggplant slices with salt and let them sit for about 30 minutes to draw out excess moisture.
    • After 30 minutes, pat the eggplant slices dry with paper towels.
    • Brush both sides of the eggplant slices with olive oil and grill or bake until tender. Set aside.
  2. Prepare the Meat Sauce:
    • In a skillet over medium heat, cook the ground lamb or beef until browned.
    • Add the chopped onion and garlic, cooking until softened.
    • Stir in the diced tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for about 15-20 minutes until the sauce thickens. Set aside.
  3. Prepare the Bechamel Sauce:
    • In a saucepan, melt the butter over medium heat.
    • Add almond flour and whisk continuously to form a roux.
    • Gradually add almond milk while whisking to avoid lumps.
    • Continue to cook and whisk until the mixture thickens.
    • Stir in Parmesan cheese, salt, pepper, and a pinch of nutmeg. Remove from heat.
  4. Assemble the Moussaka:
    • Preheat your oven to 350°F (175°C).
    • In a baking dish, layer half of the grilled eggplant slices.
    • Spread the meat sauce over the eggplant layer.
    • Add another layer of eggplant slices and top with the bechamel sauce.
  5. Bake:
    • Bake in the preheated oven for 30-40 minutes, or until the top is golden brown and bubbly.
  6. Serve:
    • Allow the moussaka to cool for a few minutes before slicing.
    • Serve and enjoy your keto moussaka!
