Keto Onion Rings

Ingredients:

  • 1 large onion, cut into 1/4-inch rings
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • Coconut oil or avocado oil, for frying

Instructions:

Step 1: Prepare Onion Rings

  1. Slice the onion into rings about 1/4 inch thick, and separate them. Set aside.

Step 2: Prepare the Breading

  1. In a shallow bowl, mix together the almond flour, Parmesan cheese, paprika, garlic powder, salt, and black pepper.

Step 3: Prepare the Egg Wash

  1. In another bowl, beat the eggs.

Step 4: Bread the Onion Rings

  1. Dip each onion ring into the egg mixture first, then coat it in the almond flour mixture, pressing gently to ensure the coating sticks. Repeat until all onion rings are coated.

Step 5: Fry the Onion Rings

  1. In a deep skillet or frying pan, heat coconut oil or avocado oil over medium heat until it reaches 350°F (175°C).
  2. Fry the onion rings in batches, making sure not to overcrowd the pan. Fry each ring for 1–2 minutes per side or until golden brown and crispy.
  3. Use a slotted spoon to transfer the cooked onion rings to a paper towel-lined plate to drain excess oil.

Step 6: Serve

  1. Serve the onion rings warm with your favorite keto-friendly dipping sauce, like sugar-free ketchup or garlic aioli.
