KETO PECAN SNOWBALL COOKIES
Ingredients:
- 1 cup almond flour
- 1/2 cup finely chopped pecans
- 1/4 cup powdered erythritol or your preferred keto-friendly sweetener
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- Additional powdered erythritol for dusting (optional)

Instructions:
- Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.
- In a medium bowl, mix together the almond flour, chopped pecans, powdered erythritol, and salt until well combined.
- Add the softened butter and vanilla extract to the dry ingredients. Use a spatula or your hands to mix until a dough forms.
- Shape the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet, spacing them about 1 inch apart.
- Bake the cookies in the preheated oven for 12-15 minutes, or until they are set and just starting to turn golden brown on the bottom.
