Keto Reuben Chaffles

Ingredients

For the chaffles:

  • 1 cup shredded mozzarella cheese
  • 2 large eggs
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste

For the Reuben filling:

  • 1 cup cooked corned beef, chopped or shredded
  • 1/2 cup sauerkraut, drained
  • 1/2 cup shredded Swiss cheese
  • 2 tbsp sugar-free Thousand Island dressing (or your preferred keto-friendly dressing)

 

Instructions

  1. Preheat the waffle maker: Preheat your waffle maker according to the manufacturer’s instructions.
  2. Prepare the chaffle batter: In a mixing bowl, combine the shredded mozzarella cheese, eggs, garlic powder, onion powder, salt, and pepper. Mix well until fully combined.
  3. Cook the chaffles: Pour half of the batter into the preheated waffle maker, spreading it evenly. Close the lid and cook for about 3-5 minutes, or until the chaffle is golden brown and crispy. Remove and repeat with the remaining batter to make a second chaffle.
  4. Prepare the Reuben filling: In a separate bowl, mix the chopped corned beef, sauerkraut, shredded Swiss cheese, and Thousand Island dressing until well combined.
  5. Assemble the chaffles: Once the chaffles are ready, place one chaffle on a plate and spread a generous amount of the Reuben filling on top. Add another chaffle on top to create a sandwich effect.
  6. Serve: Optionally, you can place the assembled chaffle sandwich back in the waffle maker for a minute to warm everything through and melt the cheese. Serve hot and enjoy!
