Keto Sheet Pan Pizza

Ingredients:

For the Crust:

  • 2 cups shredded mozzarella cheese
  • 1/4 cup cream cheese
  • 2 large eggs
  • 1 1/2 cups almond flour
  • 1 tsp baking powder
  • 1 tsp garlic powder
  • 1 tsp dried oregano (optional)
  • 1/4 tsp salt
  • 1/4 tsp black pepper

For the Toppings:

  • 1/2 cup sugar-free marinara sauce (or pizza sauce)
  • 1 1/2 cups shredded mozzarella cheese (for topping)
  • 1/2 cup pepperoni slices (or any other topping of your choice)
  • 1/4 cup sliced bell peppers, onions, mushrooms, or other veggies (optional)
  • Fresh basil leaves (for garnish, optional)
  • Red pepper flakes (optional, for added heat)

Instructions:

  1. Preheat the Oven:
Preheat your oven to 400°F (200°C). Line a large baking sheet (about 9×13 inches) with parchment paper or lightly grease it.
  2. Make the Pizza Crust:
In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave for 30 seconds, stir, and repeat until the cheeses are melted and smooth (about 1-1.5 minutes total).
  3. Add the Dry Ingredients:
Stir in the eggs, almond flour, baking powder, garlic powder, oregano, salt, and pepper into the melted cheese mixture. Mix well until you have a dough-like consistency. If it’s too sticky, you can refrigerate it for 10-15 minutes to firm up.
  4. Shape the Crust:
Spread the dough out on the prepared baking sheet, using your hands or a rolling pin to flatten it into an even layer. Press it to the edges of the sheet pan to form a rectangular shape, about 1/4-inch thick.
  5. Bake the Crust:
Bake the crust in the preheated oven for about 10-12 minutes or until the edges are golden brown.
  6. Add the Toppings:
Remove the crust from the oven and spread the sugar-free marinara sauce over the top, leaving a small border around the edges. Sprinkle with shredded mozzarella cheese, then add your choice of toppings like pepperoni, vegetables, or any keto-friendly toppings.
  7. Bake Again:
Return the pizza to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
  8. Garnish and Serve:
Once done, remove from the oven and add fresh basil leaves or a sprinkle of red pepper flakes, if desired. Let the pizza cool for a few minutes before slicing.

Enjoy:
