Ingredients:

Meat Filling:

  • 1 lb ground beef or ground lamb
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ½ cup celery, finely chopped
  • ½ cup carrots, finely chopped (optional for a small carb addition)
  • 1 cup mushrooms, chopped
  • 2 tbsp tomato paste
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme, chopped
  • 1 cup beef or vegetable broth
  • Salt and pepper, to taste

Cauliflower Mash Topping:

  • 1 large head of cauliflower, chopped
  • ¼ cup heavy cream
  • 2 tbsp butter
  • ½ cup shredded cheddar cheese (optional for extra flavor)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Meat Filling:
    • Heat olive oil in a large skillet over medium heat. Add the diced onions, garlic, celery, and carrots (if using), and sauté until softened, about 5-7 minutes.
    • Add the ground meat to the skillet, breaking it up with a spatula. Cook until browned, and season with salt and pepper.
    • Stir in the mushrooms, tomato paste, rosemary, and thyme, and cook for another 2-3 minutes until the mushrooms are soft.
    • Pour in the beef or vegetable broth, bringing the mixture to a simmer. Reduce heat and let it cook for about 10 minutes, until the liquid reduces and thickens slightly. Remove from heat and set aside.
  3. Make the Cauliflower Mash:
    • Bring a large pot of salted water to a boil and add the cauliflower. Boil for about 10-12 minutes, until the cauliflower is very tender. Drain well.
    • Transfer the cauliflower to a food processor or blender, and add the heavy cream, butter, salt, and pepper. Blend until smooth and creamy. If desired, stir in the shredded cheddar cheese for added flavor.
  4. Assemble the Shepherd’s Pie:
    • In a baking dish, spread the meat filling evenly over the bottom.
    • Spoon the cauliflower mash on top of the meat mixture, spreading it evenly with a spatula.
    • For a golden top, use a fork to create small ridges in the mash, or sprinkle a bit of extra cheese over the top if desired.
  5. Bake: Place the casserole dish in the preheated oven and bake for 20-25 minutes, until the top is golden and bubbly.
  6. Serve and Enjoy: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley, and enjoy your warm, comforting keto shepherd’s pie!
