Keto Shrimp Alfredo
Ingredients:
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons cream cheese
- Salt and pepper to taste
- 1 teaspoon Italian seasoning (optional)
- 1/4 cup chopped fresh parsley (optional)
- Zucchini noodles or shirataki noodles (for serving)

Instructions:
- Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Add shrimp to the skillet and cook until they turn pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- In the same skillet, add heavy cream and cream cheese. Stir until the cream cheese is melted and the mixture is smooth.
- Stir in grated Parmesan cheese until it’s melted and the sauce thickens slightly. If the sauce is too thick, you can thin it out with a little bit of water or chicken broth.
- Season the sauce with salt, pepper, and Italian seasoning, if using. Taste and adjust seasoning as needed.
- Add the cooked shrimp back to the skillet and stir to coat them with the Alfredo sauce. Let it simmer for a couple of minutes until everything is heated through.
- Remove the skillet from heat and stir in chopped parsley, if using.
- Serve the Keto Shrimp Alfredo over zucchini noodles or shirataki noodles for a low-carb option.
