Keto Strawberry Cream Cheese Cookies Recipe
Ingredients
- For the Cookies:
- 1 cup almond flour
- 1/2 cup cream cheese, softened
- 1/2 cup granulated erythritol (or any low-carb sweetener)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup fresh strawberries, finely chopped
- For the Topping (optional):
- Powdered erythritol for dusting
- Extra strawberries for garnish
Instructions
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix Wet Ingredients:
- In a large mixing bowl, combine the softened cream cheese, erythritol, egg, and vanilla extract. Mix until smooth and creamy.
- Add Dry Ingredients:
- Add the almond flour, baking powder, and salt to the cream cheese mixture. Stir until well combined.
- Fold in Strawberries:
- Gently fold in the chopped strawberries until evenly distributed throughout the dough.
- Shape Cookies:
- Using a tablespoon, scoop out the dough and place it on the prepared baking sheet. Flatten each scoop slightly with the back of the spoon, as they will not spread much while baking.
- Bake:
- Bake for 12-15 minutes, or until the edges are golden. Keep an eye on them, as almond flour cookies can brown quickly.
- Cool:
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
- Optional Topping:
- Once cooled, dust with powdered erythritol for a sweet finish and garnish with extra strawberries if desired.
Enjoy!
