Instructions:
Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Toast Peanuts: Spread the peanuts on the baking sheet and toast them in the preheated oven for about 5-7 minutes, or until they’re lightly golden. Keep an eye on them to avoid burning. Remove from the oven and let them cool slightly.
Prepare Toffee Mixture:
In a medium saucepan, melt the butter over medium heat.
Once melted, stir in the powdered erythritol, almond flour, and sea salt. Continue to cook, stirring constantly, until the mixture starts to bubble and thickens slightly. This should take about 3-4 minutes.
Combine Peanuts and Toffee:
Add the toasted peanuts to the toffee mixture and stir until the peanuts are well coated.
Cool and Set:
Transfer the peanut-toffee mixture back onto the lined baking sheet and spread it out into an even layer.
Allow it to cool completely at room temperature. As it cools, the toffee will harden.
Break and Store:
Once cooled and hardened, break the toffee peanuts into pieces.
Store in an airtight container at room temperature for up to a week, or refrigerate for longer storage.
