Instructions:

  1. Prepare the Zucchini:
    • Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much excess water as possible. This step is important to ensure your tortillas don’t become soggy.
  2. Make the Dough:
    • In a medium-sized mixing bowl, whisk the egg. Add the squeezed zucchini, almond flour, coconut flour, garlic powder, onion powder, salt, and pepper. Stir everything together until a dough forms. The dough should be slightly sticky but firm enough to shape.

Cook for 2-3 minutes on one side, then flip and cook for another 2-3 minutes on the other side, until golden brown and crispy. Repeat with the remaining tortillas.
  5. Serve:
    • Once cooked, remove the tortillas from the skillet and set aside. Allow them to cool slightly before serving. You can stack them and wrap them in a kitchen towel to keep warm.
