I make the same portion size as I eat (OMAD), for my husband who is not carnivore. He typically a makes his own side dish therefore can’t eat all the meat on his plate. So the leftovers go in fridge. He is notorious for “forgetting” about his leftovers. So, I’ve started making this once a week.
It’s tasty.
And all the leftovers are gone.
Leftover Quiche
1 Tbsp. Butter
8 Eggs
2 Tbsp. Heavy Whipping Cream
1 tsp. Salt
5 Oz. Cheese, shredded, divided
6 Oz. Any leftover meat(s), diced or chopped
Sour cream to garnish
Melt butter in oven safe skillet or dish.
In a bowl, whip eggs, cream, and salt together until well blended, pour into skillet.
Sprinkle meats in the egg mixture. Top with half the shredded cheese. With a fork, push the cheese down a bit to cover slightly in the egg mixture. Bake at 350° until to top begins to brown. Remove and top with remaining cheese. Serve with a dollop of sour cream on top.
*Seasonings can be added according to personal preferences.
