Lemon & Garlic Chicken Bites

Ingredients:

    • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
    • 3 cloves garlic, minced
    • 1  lemon, zest and  juice
    • 2 tbsp olive oil
    • 1 tsp dried oregano
    • 1/2 tsp dried thyme

 

 

  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Marinate the Chicken:
    • In a bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, dried oregano, dried thyme, salt, and pepper.
      • Add the chicken bites to the marinade, making sure each piece is well coated.
      • Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
    • Cook the Chicken:
      • Preheat a large skillet over medium-high heat. You can also use an air fryer preheated to 375°F (190°C).
      • Add a bit of olive oil to the skillet if needed.
      • Add the marinated chicken bites to the skillet, cooking in batches if necessary to avoid overcrowding. Cook for about 5-7 minutes, turning occasionally, until the chicken is golden brown and cooked through. If using an air fryer, cook for about 10-12 minutes, shaking the basket halfway through.
    • Serve:
        • Transfer the cooked chicken bites to a serving plate.

       

       

      • Garnish with fresh parsley and serve with lemon wedges on the side for an extra burst of citrus flavor.
