Lentil, potato, and carrot patties are a hearty and flavorful vegan dish! They’re perfect as a main or a snack, and they have a great texture with lots of savory and slightly sweet flavors from the lentils, potatoes, and carrots. Here’s a simple recipe to make them:
Ingredients:
- 1 cup cooked green or brown lentils (or canned, drained and rinsed)
- 2 medium potatoes, peeled and boiled until tender
- 1 large carrot, grated
- 1/4 cup breadcrumbs (or use gluten-free breadcrumbs if needed)
- 1/4 cup finely chopped onion (optional, for extra flavor)
- 2 cloves garlic, minced
- 1 tbsp ground flaxseed (optional, for binding)
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Olive oil (for frying)
Instructions:
- Prepare the vegetables: Boil the potatoes until they’re soft, then mash them with a fork or potato masher. Grate the carrot using a box grater or food processor.
- Mash the lentils: In a large bowl, mash the cooked lentils with a fork or potato masher until most of the lentils are broken down, but some texture remains.
- Combine the ingredients: Add the mashed potatoes, grated carrot, onion, garlic, breadcrumbs, soy sauce, ground flaxseed (if using), cumin, smoked paprika, salt, and pepper to the bowl. Mix everything together until well combined. If the mixture feels too wet, add a little more breadcrumbs to help bind it.
- Form the patties: Once everything is mixed, shape the mixture into small patties (about 8-10, depending on the size you prefer).
- Cook the patties: Heat a little olive oil in a non-stick skillet over medium heat. Once hot, carefully place the patties into the skillet. Cook for about 4-5 minutes per side, until golden and crispy on the outside.
- Serve: Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil. Serve the patties warm with a side of vegan yogurt, salsa, or a simple salad!
These patties are hearty, nutritious, and full of flavor. You can also freeze them for a quick meal later! You could even serve them in a wrap with fresh veggies and a drizzle of your favorite sauce.
How does that sound? Would you like to add anything to the patties, or tweak the recipe?
