Instructions:
For the Keto Buns (Cloud Bread):
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the cream cheese, egg yolks, and garlic powder (if using). Mix until smooth.
- In a separate clean, dry bowl, beat the egg whites with cream of tartar until stiff peaks form.
- Gently fold the egg yolk and cream cheese mixture into the egg whites. Be careful not to deflate the egg whites.
- Spoon the cloud bread mixture onto the prepared baking sheet, creating bun-sized rounds.
- Bake in the preheated oven for about 25-30 minutes or until they are lightly browned and set. Let them cool.
For the Sandwich Filling:
- Slice the cloud buns in half to create a top and bottom bun.
- In a small saucepan, melt the unsalted butter over low heat. Stir in the Dijon mustard.
- Preheat your oven’s broiler.
- Assemble the sandwiches by placing sliced deli ham and Swiss cheese on the bottom halves of the cloud buns.
- Drizzle the Dijon and butter mixture over the sandwich fillings.
- Place the top halves of the cloud buns on the sandwiches to create a complete sandwich.
- Place the sandwiches under the broiler until the cheese is melted and bubbly, typically for a few minutes. Keep a close eye on them to avoid burning.
