Low Point Wonton Soup
Ingredients:
- 1/2 lb ground turkey or chicken (you can also use pork)
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 1/4 cup chopped green onions
- 1/4 cup finely chopped cabbage or bok choy
- 24 square wonton wrappers (about 3-inch squares)
- 4 cups low-sodium chicken broth
- 1 cup sliced mushrooms
- 1 cup sliced carrots
- Salt and pepper to taste
- Optional: chopped cilantro for garnish
Instructions:
- In a mixing bowl, combine the ground turkey or chicken with soy sauce, sesame oil, minced ginger, minced garlic, chopped green onions, and chopped cabbage or bok choy. Mix until well combined.
- Place a small spoonful of the meat mixture in the center of each wonton wrapper. Moisten the edges of the wrapper with water and fold it diagonally to form a triangle, pressing the edges to seal.
- In a large pot, bring the chicken broth to a simmer over medium heat. Add the sliced mushrooms and carrots to the broth and let them cook for about 5 minutes, until they start to soften.
- Gently drop the wontons into the simmering broth and cook for about 3-4 minutes, until they float to the surface and the filling is cooked through.
- Season the soup with salt and pepper to taste. Garnish with chopped cilantro if desired.
- Serve hot and enjoy your low point wonton soup!
