Ingredients:

  • 3 ripe mangoes (about 3 cups of mango puree, peeled and diced)
  • 1/2 cup full-fat coconut milk (canned, for creaminess)
  • 1/4 cup maple syrup or agave nectar (adjust based on mango sweetness)
  • 1 tablespoon lime juice (for a zesty kick)
  • 1/2 teaspoon vanilla extract (optional, for added depth of flavor)
  • Pinch of salt (to enhance the sweetness)

Instructions:

  1. Prepare the mangoes:
    • Peel and dice the mangoes. Blend the mango pieces in a blender or food processor until smooth, making about 3 cups of mango puree.
  2. Make the gelato mixture:
    • In a bowl, whisk together the mango puree, coconut milk, maple syrup (or agave), lime juice, vanilla extract (if using), and a pinch of salt. Taste the mixture and adjust sweetness by adding more maple syrup if needed. If you prefer a tangier flavor, you can add a bit more lime juice.
  3. Chill the mixture:
    • Pour the mango mixture into a container and refrigerate for at least 1-2 hours, or until it’s well chilled. This step helps with the freezing process.
  4. Churn the gelato:
    • If you have an ice cream maker, follow the manufacturer’s instructions to churn the mango mixture until it reaches a smooth, soft-serve consistency (usually about 20-25 minutes).
    • If you don’t have an ice cream maker, pour the chilled mixture into a shallow dish, cover it, and place it in the freezer. Every 30-45 minutes, stir the mixture vigorously with a fork to break up ice crystals and create a creamy texture. Continue for about 2-3 hours until the gelato has a smooth, scoopable consistency.
  5. Serve:
    • Once the gelato is ready, scoop it into bowls or cones and enjoy immediately. If you prefer a firmer consistency, let the gelato freeze for an additional hour before serving.
  6. Optional Garnishes:
    • Top with chopped fresh mango, shredded coconut, or a drizzle of agave syrup for extra flavor.

Tips:

  • If you want a richer gelato, you can increase the amount of coconut milk, but be careful not to make it too liquidy.
  • If using frozen mango chunks, the mixture might be a bit thicker, so you might need to add a little more coconut milk to achieve the right consistency.
