ONE POINT Blueberry Muffins

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened applesauce
  • 1/4 cup granulated sugar substitute (like Stevia or monk fruit)
  • 1/2 cup non-fat plain Greek yogurt
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a mixing bowl, combine flour, sugar substitute, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together applesauce, Greek yogurt, egg, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
